How will configured custom fields affect my existing projects?

By default, custom fields are not applied to existing projects. However, you can manually select any existing projects to apply the custom field to. See Apply Configurable Custom Fields to Projects.
Once you have assigned a custom field to projects, the custom field will override Procore's default custom field. When team members create an item from the appropriate project level tool, they will only see your company's configured custom field.
